We don’t want to let it go to waste so I have compiled some ideas on how to use that leftover coffee in your kitchen.

A few weeks ago, I was looking at my pantry only to find myself staring at too many cans of soup! However, you can do many things with all those leftovers, from simple dinner ideas to delicious treats. Sometimes, if an idea is challenging to think up, using some leftover ingredients in unexpected ways can help you develop something completely different and new.
For this reason, I decided to provide you with a few great ideas on how you can use your leftover coffee. You can make some delicious cake or ice cream using your leftover coffee, or perhaps you might like to experiment with some savory dishes too. With these ideas in mind and plenty more besides, it should be easy to find yourself something tasty to eat.

Many people are trying to make simple foods look and taste amazing, and there are lots of creative ideas out there that you might not have come across before. With this in mind, I thought I would share a few of my own, although they are simple but very delicious.
1. Coffee Cupcakes:
I made coffee cupcakes using leftover coffee grounds to give them a real kick, and they were amazing! This recipe makes about two dozen cupcakes and only needs four ingredients. I usually make a whole batch and freeze some, so there is plenty of cupcakes for everyone.
Ingredients: ½ cup coffee grounds, ¾ cup sugar, 1½ sticks butter (cold), 1 egg, and 1 teaspoon vanilla extract.
How to make it:
First, mix the coffee grounds and sugar in a bowl. Next, add the egg into the mixture along with the cold butter. Finally, add in the vanilla extract. Use a hand mixer to combine everything thoroughly before transferring it to a baking pan (you can also use a piping bag). Put the pan into a preheated oven at 350 degrees for about 25 to 30 minutes. If your cupcakes are not done by this time, leave them in the oven for a little longer.
2. Coffee Brownie Popsicles:
I love making popsicles because they are so simple, and this recipe is so simple to make. They are the perfect summer treat, and kids love them (the coffee helps make them extra refreshing).
Ingredients: ½ cup coffee grounds, ½ cup water, ¾ cup sugar, 1½ teaspoon vanilla extract (or 2 teaspoons), 1 stick butter (cold), 5 eggs, 1 cup flour, and Popsicle sticks.
How to make it:
First, mix everything in a large saucepan. Cook over high heat until the mixture thickens without stirring. When the mixture is ready, pour into mold and let it cool in the refrigerator for about an hour. Use a wooden stick to remove them from their molds before freezing them individually.
3. Coffee Cake:
Over the years, I have made many different cakes, and they have all been delicious. This is one of my favorites, and you can top it with some whipped cream if you like.
Ingredients: 1 stick butter (softened), ¼ cup sugar, ½ cup brown sugar, 3 eggs, 2 cups flour, ½ teaspoon baking powder, ½ teaspoon baking soda, 1 cup finely ground coffee grounds (cold), 3 tablespoons milk.
How to make it:
First of all, cream together the butter and both sugars until smooth. Next, add in the eggs and beat well. Next, stir in the dry ingredients until the mixture is thoroughly combined. Add in the milk and mix once more.
Last but not the least, use a knife to make several holes around the sides of your muffin tin, especially if you have larger muffin tins. Fill each cup with the batter and then sprinkle the coffee grounds on top. They will sink to the bottom and remain there so that you will always have fresh grounds for your next batch! Bake them for about 20 minutes at 350 degrees or until a toothpick comes out clean when you stick it into one of them.
